Odoo or ERPNext?

We implement both, so we have no reason to push you toward either. Broadly: Odoo tends to win on interface polish, its point of sale, and the breadth of its app ecosystem. ERPNext tends to win on licensing economics once you pass twenty or thirty users, and on how deeply you can customise it.

The right answer depends on your headcount, how much customisation you need, and the shape of your budget — licence cost every year versus implementation cost once.

It depends on which modules you need and how many users. Enterprise adds features and support but is licensed per user annually. We size this with you before you commit, rather than after.

It can, but this is configuration and often customisation rather than a checkbox. Sales tax treatment, withholding and invoice formats need setting up deliberately, and we do that as part of implementation.

Yes. We audit the existing configuration and customisations, document what is there, and agree what to fix before taking on support.
